Mei Mei’s Favourite Gingerbread

Mei Mei's Favourite Gingerbread

 16 oz Brown Sugar (1 box)
 2 cups Flour
 1 ½ sticks Oleo
 ½ tsp Ground Ginger
 2 tsp Cinnamon
 1 tsp Nutmeg
 1 tsp Baking Soda
 2 Eggs (Unbeaten)
 1 cup Buttermilk

Cut Oleo, Flour, and Sugar together.
Set aside 1 cup of mixture.

Into remainder of sugar mixture, sprinkle soda and spices. Add eggs and mix well. Lightly stir in Buttermilk. Pour into a 9x12 ungreased metal pan. Sprinkle top with reserved cup of marg-sugar mixture.

Bake at 350 degrees for 50 minutes.

This is one of the many of my Grandmother's recipes that I remember my mother cooking for as a child. When Logan cooked this for me, it turned out exactly as I remembered it, down to crackling topping.

Ingredients
